Since then I worked at hundreds of events per year.

Depending on the size and time of the event it can make sense to setup the day before or on the same day. Small setups can be running in less than an hour, big ones take a full day to set up. All sizes and times are possible. Of course a good plan always helps.

Yes, AV setups outside are possible. Shelter for the equipment, a stage roof, trailer stage, tent, or similar can be provided or should be on site. Power outside can be provided or has to be on site.
